Ageing
Spontaneous alcoholic fermentation takes place in 55 Hl truncated wood vats at a maximum temperature of 28 ° C for about 25 days. The wine ages for 12 to 14 months in French oak barrels followed by 12 months of bottle ageing.
 
Tasting notes
Intense purple red color with floral, berry and balsamic notes. On the nose, slight toasted notes with a subtle spice. Full and generous with soft tannins, good acidity and excellent intensity on the finish.

18 - 20 ℃
Food pairing
Perfect with roasts and wild game. Ideal with aged cheeses.
